Burritos are another staple in Belize. You can have breakfast burritos, which would ingredients such as eggs, avocado, beans, onions, and or some form of seafood. For lunch the burritos might include chicken, or shrimp and any other type of meat combo that one can dream up. All are so tasty!
These burritos will have beans, corn, and other fixings and of course they are flavored with curry seasoning, a Caribbean favorite. I also substitute flaxseed oil for olive oil, but feel free to use the latter if you’d like.
A good addition to this mix would be slices of avocado. You can try this recipe with that added and let me know how you like it. Enjoy!
1/2 cup cooked black beans 1/2 cup cooked Kidney beans
1/2 cup cooked Pinto beans 1/2 cup sweet corn
1/4 cup cilantro 1 medium Tomato chopped
1/8 cup finely chopped red onion 1tbps. flaxseed oil
3 tbsp. lemon juice Flour tortillas
Spring greens Optional: salt and pepper
- Prepare beans as you like. I stew mine seasoned with garlic powder, onion powder, ginger powder and a little curry powder.
- Finely chop the tomato, onion and cilantro.
- combine the beans and corn and pile on tortillas. add tomato, onion, spring greens and cilantro, and top off with lemon juice and flaxseed oil.
Alternatively you can refrigerate until ready to serve as a salad by leaving off the tortillas.
